Cranberry Sauce

I am in charge of the cranberry sauce this year and decided on this recipe from Emeril.  The original recipe can be found on the Food Network site.  The only thing I changed was doubling the sugar since I like the sauce sweet.


  • 2 cups cranberries
  • Juice and zest from 1 orange
  • 1/4 cup Port
  • 1 cup sugar (Emeril uses 1/2 cup sugar)
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch mixed with 1 tablespoon water


Stir the orange, zest, cranberries, sugar, port, and cinnamon in a saucepan over high heat.  Bring to a boil and then turn to simmer until the cranberries are soft and you can mush them with a spoon.  Add the cornstarch and water mixture.


Dairy Free Blueberry Muffins

I adapted these blueberry muffins from to make them dairy free and egg free.  I just substituted rice milk for the cow’s milk and did 1 tbsp. ground flax seeds mixed with 3 tbsp. water for the egg. They turned out well, but got gummy after they were covered over night.  I skipped the sugar topping.

Berry Smoothie

I am allergic to strawberries, oranges, and pineapple so I came up with this smoothie that avoids all of those fruits.  This smoothie is also dairy-free.  


1 cup mixed berries ( I used raspberries, blueberries and blackberries)

1 banana (can be frozen for a thicker drink)

1 cup raspberry apple juice

1 cup ice

Blend the fruit and juice together.  Add the ice and blend again.

Baked Penne with Roasted Vegetables

pataTonight we ate this great vegetarian Baked Penne with Roasted Veggies from Giada De Laurentiis on  I used all fresh mozzarella in stead of the cheeses she suggested and skipped the squash.  We loved it.

Vegetarian Kid Lunch

After reading Disease-Proof Your Child by Dr. Fuhrman, I am trying to change the way we feed the boys. One dinner that they both really liked this week was all fruit smoothies, Quorn Chick’n nuggets, and asparagus. The kids didn’t even know that the nuggets were NOT chicken. I plan to really limit their cheese and even wean them off of cow’s milk. I learned to make the smoothies from my sister. All you do is put in whatever fruit you have in the house with some orange juice or milk (we used rice milk once) and blend. My sister uses frozen fruit to help thicken them up. She taught me to freeze any fruit that is getting ripe or just not eaten and so that keeps the cost down on buying frozen fruit. Just make sure you cut up the bananas into 2 inch chunks before you freeze them. My kids prefer the orange juice over the milk for the smoothies.

Vegetarian Parmesan

We tried this vegetarian Parmesean this weekend and acutally liked it. It is made with mushrooms instead of chicken and then covered with cheese. It was pretty fast and simple to make too. Here is the recipe.  This could be made gluten free if you use gluten free pasta.
