Gluten-Free Stew

Serves 2



1 tbsp. oil

1 tbsp. tomato paste

2 garlic cloves, minced

1/4 tsp. dried thyme (skipped)

2 cups beef broth

8 ounces cut up red potatoes

1 cup carrots (I used baby carrots)

2 tsp. cornstarch

1 tbsp. gluten-free soy sauce

salt and pepper to taste

1 pound stew meat or sliced sirloin


Cook the oil, tomato paste, garlic and thyme in a pot over medium heat for about a minute.  Pour all of the ingredients into a crock pot and cook on low for 6-7 hours or high 4-5 hours.
