Minty Candy Cane Truffles

My friend made these for a holiday party and they were excellent!


8 oz. chocolate chips

1/2 cup heavy cream

2 tsp. peppermint extract

1/2 cup cocoa powder for dusting

1/2 cup crushed candy canes


Mix the extract and cream, microwave for one minute.

Melt the chocolate chips in the cream until smooth. Refrigerate for four hours or until firm.

Scoop out one teaspoon of the mixture and roll into balls.  Place on a wax paper covered baking sheet in the freezer for 45 minutes. Roll the balls into the cocoa powder. Chill in the freezer again.

Roll the balls in the crushed candy canes. Store in the refrigerator, covered.  Leave at room temperature for 10 minutes before serving.IMG_1966
