Minty Candy Cane Truffles

My friend made these for a holiday party and they were excellent!

 

8 oz. chocolate chips

1/2 cup heavy cream

2 tsp. peppermint extract

1/2 cup cocoa powder for dusting

1/2 cup crushed candy canes

 

Mix the extract and cream, microwave for one minute.

Melt the chocolate chips in the cream until smooth. Refrigerate for four hours or until firm.

Scoop out one teaspoon of the mixture and roll into balls.  Place on a wax paper covered baking sheet in the freezer for 45 minutes. Roll the balls into the cocoa powder. Chill in the freezer again.

Roll the balls in the crushed candy canes. Store in the refrigerator, covered.  Leave at room temperature for 10 minutes before serving.IMG_1966

White Chocolate Peppermint Bark Cheesecake

IMG_1968 My sister and I have a tradition of eating the Peppermint Bark Cheesecake from The Cheesecake Factory every year.  It is only available from Thanksgiving until it runs out.  I found this recipe on Baked by Rachel and it turned out great!  I did cut the recipe in half and baked it in a six-inch spring form.  I wasn’t sure how long to bake it and so started checking on around half the normal time.  The cheesecake ended up taking the regular baking time of 1 hour and 45 minutes.  I will for sure make this again.

*Note for next time: make sure to wrap the bottom better in foil so that water doesn’t leak in on the crust.
