Banana Bread

My kids loved this banana bread recipe from  They were supposed to be muffins, but I cut the recipe in half and made a loaf instead.  I also leave off the sugary topping.


3/4 cup flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/4 tsp. salt

2 mashed bananas

1/4 cup, plus 2 tbsp. sugar

1/2 an egg

2.5 tbsp. melted butter

Mix all of the wet ingredients, including the sugar.  Then add in the baking soda, powder and salt and mix.  Last, mix in the flour until just mixed in.

Bake at 375 for about 30 minutes.  Check to see if done, if not then bake longer.


Garlic Knots

A local pizza place makes the best garlic knots so when I found this recipe I had to try them.  These taste great and I would make them again.  The recipe is found here.

Lava Flow Drink

My sister loves Lava Flows.  We tried this recipe and it turned out pretty good.


2.5 oz. pineapple juice (5 Tbsp)

2.5 oz. cream of coconut (Coco Lopez) (5 Tbsp)

1 oz. rum (2 Tbsp)

1/2 cup ice (we needed more ice to thicken the drink, but too much watered it down too much)

Blend all of the above in a blender. (I found blending it all at once makes it thicker)

Puree strawberries with some sugar.  I just added sugar to taste.  I also let this mixture sit for a day to let the sugar dissolve.

Pour some strawberry mixture into a glass and then add the drink on top.

*This tasted good, but I would prefer it thicker.  We need to experiment with different ratios and recipes.  I am thinking an ice cream maker would thicken it nicely, but that wouldn’t work for making Lava Flows all afternoon and into evening since the ice cream maker would thaw.  Also, I used a banana one time since a lot of recipes use one and we thought it tasted too much like a banana smoothie.
