Interstitial Cystitis Food Ideas

We have a new diet to follow in our house for a condition called Interstitial  Cystitis.  I am going to keep a diary of what foods we eat in hopes that it helps us or someone else.

Dinner: Flattened chicken cooked in a frying pan with butter and salt, red mashed potatoes with almond milk and butter, broccoli, mushroom and red pepper mixture, blueberries.  Vanilla ice cream for dessert.

Snacks today: Clif bar crunchy honey granola bars, organic Wheat Thin type crackers, string cheese, and blueberry muffins.

Breakfast: Mighty Tasty cereal

Friday 1-27-12: Chicken Tetrazzini  This was a bit runny, but still good.  It made a lot so that we used the rest for leftovers on Saturday.

Snacks: popcorn

Saturday 1-28-12: Chicken burgers with salt and garlic powder.  Melted mild cheddar on top.  We made our own buns.

lunch: bruschetta that we made with red peppers.  I mixed olive oil with one garlic clove and then coated each side of some sliced French bread with the oil mixture.  Broil one side of the bread until toasted. Remove from oven and  put some sautéed red peppers with salt on the untoasted side.  Then sprinkle some mozzarella cheese on the top and put back in the oven to broil until it bubbles. 

snacks: popcorn, Larabars (coconut pie and cashew cookie), Clif Bar Crunch honey flavor, Kettle Chips, Organic Wheat Thin style crackers, string cheese

breakfast: cream cheese and bagel, eggs, Mighty Tasty, Oatmeal, blackberries, blueberries, pears, Kashi blueberry waffles

Dinner or lunch: Tetrazzini (see link above), burgers, almond butter sandwich with blueberry jam (careful on the ingredients here, need to post the brand we got), ravioli (if you can do ricotta), turkey sandwich, Red Forks brand Bianca pizza (has ricotta with vinegar and olives which we pick off and we are fine).

sides: homemade fries or Alexia steak fries (these are the only ones I found without pepper or citric acid), veggies, garlic knot rolls

dessert: Rice Dream ice cream sandwich with carob coating, vanilla ice cream, vanilla cookies from Whole Foods that look like white Oreos
