Pumpkin Pie

I have been trying for a few years to find a great pumpkin pie and so far this one is the winner.  The recipe is from Canadian Living.  I choose to make it without a crust.

2 eggs

14 oz. canned pumpkin

1 300 ml can sweetened condensed milk

1/2 cup brown sugar, packed

1 tsp. cinnamon

1/2 tsp. salt

1/4 tsp. cloves

1/4 tsp. ginger

1/4 tsp. nutmeg

Directions: Mix all of the ingredients and pour into a pie shell (I just pour it into a round pie dish without a crust). Bake at 425 for 15 minutes. Turn down the heat to 375 and bake for another 35 minutes.  Remove from the oven and wait for it to cool.  We like ours chilled, so I always put it in the refrigerator after it is mostly cool.

Optional: Whip some whipped cream with sugar for a topping.
