Patty’s Sweet Potatoes

My sister makes this great sweet potato casserole every year for Thanksgiving. My kids love it!

 

INGREDIENTS:

1 cup all-purpose flour

2/3 cup packed brown sugar

1/4 cup stick butter, melted

1/2 teaspoon ground cinnamon

4 medium sweet potatoes, peeled and halved (about 2-1/2 pounds)

1/2 cup granulated sugar

1-1/2 teaspoons vanilla extract

1 large egg white

1 (5-ounce) can fat-free evaporated milk

 

Mix the flour, brown sugar, cinnamon and melted butter; set aside.  Boil the potatoes until soft and then mash.  Add the egg white, milk,  vanilla, white sugar, and 1 cup of the set aside mixture.  Mix everything and then top with the remaining mixture.  Bake in a 350 degree oven for 45 minutes. Yum!
