Yahoo Bars Recipe

My kids loved eating Clif Bars for breakfast, but the cost was really eating away at our grocery store budget.  I found a homemade recipe on Enlightened Cooking that was a perfect replacement.  I have since changed the recipe a little bit to fit our tastes and my kids have renamed them Yahoo Bars.

1 cup old fashioned oats

1 cup Barbara’s Brown Rice Crisp cereal (or similar cereal)

2 tbsp. ground flax seeds (I grind them in the coffee grinder)

1/4 cup chopped cashews or almonds

1/4 cup chopped chocolate chips (or mini chips)

1/2 cup peanut butter

1/3 cup honey

1 tsp. vanilla

Heat the honey and peanut butter on low.  Mix all of the dry ingredients (not the chocolate chips) while the peanut butter mixture is melting.  Once the peanut butter is melted, add in the vanilla and quickly stir.  Then blend with the dry ingredients. Once that is well blended, add in the chocolate chips.  Then pour this mixture into an 8×8 buttered or oiled pan and press down with wax paper.  Refrigerate until firm.  Cut into bars and enjoy.

 

After eating these, my kids can’t go back to the store bought Clif Bars.  I always have to have a batch ready to go for after school snacks.  Also, if you don’t like peanut butter you should check out the Enlightened Cooking blog for other recipes since she has many different variations.
