Baked Penne with Roasted Vegetables

pataTonight we ate this great vegetarian Baked Penne with Roasted Veggies from Giada De Laurentiis on Foodnetwork.com.  I used all fresh mozzarella in stead of the cheeses she suggested and skipped the squash.  We loved it.

Big, Fat, Chewy Chocolate Chip Cookies

I made these cookies from According to Kelly and they were very good.  They had a nice puffiness and tasted great.  I was a little bit skeptical about melting the butter, but they puffed up just fine.  I will definitely make these again.  My picture isn’t very good since there doesn’t seem to be a whole lot of chocolate in that cookie!

I also used the 1/2 cup of ground oatmeal in this recipe.

cec Last night I made our favorite homemade Mexican dish, Chicken Enchilada Casserole from Cooking Light.  My sister made this for me once and it was restaurant quality.  We make it now using flour tortillas instead of the corn ones.  I also use less broth. Dandelion Painting with Kids

Today the boys and I did some weed painting.  I found the idea on Angel Bug Baby.  We just went out and picked dandelions, dipped them in paint, and painted on the paper.  Frank added capes to his flower prints and said that they were wizards.

Science Kit for Six Year Old

wand My son got the Scientific Explorer’s The Magic Science Wizard’s Kit from his great grandfather this summer.  He really enjoyed all of the experiments.  We spent a little over an hour doing all of them.  The kit is filled with many ingredients that you may already have in your house and it already has enough ingredients to do most of the experiments more than once.

Star Wars Party

IMG_7459IMG_7452IMG_7447IMG_7444Today we had a little Star Wars party for my son.  We had pizza, strawberries, little R2D2 bananas (from the  Star Wars Cookbook), chips, Yoda Soda (also from the cookbook), and ice cream.

The kids played pin the light-saber on Yoda and bombed a chalk drawing of the Death Star with water balloons.  

My son loves a Mexican restaurant near our house that has a huge bouquet of suckers, so I tried to make a miniature one in a dessert dish.

The bananas got a little soggy and gross and the kids didn’t like them.  I really liked the outer coating since they were covered in white chocolate and salted peanuts. 

Overall, it was a great day!
