Mexican Rice

ric We made this Mexican rice to go along with our tacos last night. It was pretty good.  The recipe came from Recipe Zaar.








12 oz. tomatoes, I bought canned and then drained them

1 medium white onion, chopped

3 jalapenos, remove seeds and chop, I left these out since we have young kids

2 cups white rice, rinsed well

1/3 cup oil, we used olive oil

4 garlic cloves, minced

2 cups chicken broth

1 tablespoon tomato paste

1.5 teaspoons salt

1/2 cup fresh cilantro, chopped


Preheat the oven to 350. 

1. Process the tomatoes and onion in a food processor.  Reserve 2 cups of this mixture. I didn’t have enough to make 2 cups, but it still worked.

2.  Heat the oil in a 12 inch tall pot over medium high for 2 minutes. Add and cook the rice in the oil for 6-8 minutes, or until it is golden.

3.  Add garlic and jalapenos and cook for about 1.5 minutes over medium heat. 

4.  Add broth, tomato mixture, tomato paste, and salt over medium high. Bring to a boil.

5.   Bake in a covered dish for 30-35 minutes. Make sure to stir the rice after 20 minutes. 

6.  Stir in cilantro after baking and serve.
