Tonight we had this Rachel Ray recipe for Sloppy Joes.

I do make some changes to the recipe. The recipe I use is as follows:

  • 2 tablespoons extra-virgin olive oil
  • 1 pound ground chicken
  • 1/2 red onion
  • 1/2 red bell pepper
  • 1/8 tsp. paprika
  • 1/2 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1 tsp. Kosher salt
  • 1/8 tsp. cayenne ( I leave this out if it is for kids)
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup tomato sauce,( 8- ounce) can

Cook the meat in the olive oil on medium high heat.  Once the meat is pretty much cooked, add in the vegetables.  Next mix the tomato sauce, brown sugar, Worcestershire sauce,  and all of the spices in a bowl and then pour it into the meat.  Turn the heat down to low and cook for 10 minutes.  Serve on buns.

Moomie’s Buns

These are great buns!  We use them whenever we eat burgers and I even use this dough recipe for cinnamon rolls.

1 cup water

2 tbsp. butter

1 egg

3 1/4 cups flour

1/4 cup sugar

1 tsp. salt

1 tbsp. yeast

Place all of the ingredients into a bread maker and make on the dough cycle.  When the cycle is complete, form medium sized round discs of the dough.  The size depends on what you like.  Cover the buns with a towel for 30 minutes. Bake in the oven at 375 for about 12 minutes.
