Sugar and Spice Peppitas

For the final Spanish class, we had to bring in a dish to share. I chose these Pepitas from Epicurious. They got great reviews so I figured they were safe. They were a hit. I even burned them a little because I kept waiting for them to get golden in color. That was a mistake. Make sure you take them out when they look done enough. I also didn’t have white sugar so I used brown and that worked out fine. Here is the recipe:

Nonstick vegetable oil spray
2 cups shelled pepitas ( I got them from the bins at Whole Foods)
1/3 cup sugar
1 large egg white, beaten until frothy
1 tablespoon chili powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 to 1/2 teaspoon cayenne pepper

Spray a cookie sheet with spray. Mix the rest of the ingredients in a bowl. Pour the seeds onto the cookie sheet and bake at 350 degrees for about 15 minutes. Beware of the time, since mine were done earlier. Also mix the seeds half way through the bake time. Once they are done, let them cool and spread them out.
