Roasted Vegetable Spread

Tonight we had this dip with our spaghetti and it was really good! The kids didn’t care for it, but Wolfie and I really enjoyed it.  We dipped French bread into it.  Yum!  Here is the recipe:

Roasted Vegetable Spread by Alton Brown
1 red bell pepper, sliced into rings
1 medium onion, sliced into rings
4 garlic cloves, crushed
1 small zucchini, sliced
1 tablespoon olive oil
8 ounces cream cheese
Kosher salt
black pepper
Preheat oven to 400.
Place bell pepper, onion, garlic, zucchini, and olive oil in a bowl and toss.  Spread the vegetables on a cookie sheet.  Roast for about 45 minutes or until soft and toasty on edges.  Mine took less time than 45 minutes.  Make sure to toss once in a while.
Cool the vegetables and then blend them with the cream cheese in a mini food processor.  Add salt and pepper to taste.  
Store in the refrigerator for up to 1 week.
