Lemon Cake

This recipe came from Martha Stewart and it is a really good lemon cake.

1/2 cup butter, at room temperature

1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup buttermilk ( I did 1/2 tbsp. vinegar in a measuring cup and then added enough milk to make it 1/2 cup)
1 tsp. vanilla
grated lemon zest from one lemon and the juice, plus another 2 tablespoons for the glaze
1 cup sugar
2 large eggs
1 1/2 cups powdered sugar
1.  Preheat oven to 350 and prepare muffin tins with butter and flour.
2.  Whisk the flour, baking powder, and salt.
3.  Cream the butter and sugar.  Add the eggs and vanilla.
4.  Add the flour alternating with the buttermilk.
5.  Bake for 20-25 minutes.
Prepare the glaze: powdered sugar and the rest of the lemon juice.  Pour over the cakes.  
I didn’t make the glaze and thought the cakes were fine as is.  I did put them in muffin liners and they totally stuck to the sides so next time I will grease the pans.
