Chocolate Sorbet

Today I made Chocolate Sorbet from The Perfect Scoop: Ice Creams, Sorbets, Granitas, and Sweet Accompaniments, by David Lebovitz.  I got the recipe fromEpicurious.  I didn’t really care for this dessert.  It is a little too chalky and rich.  Here is the recipe if you are interested in trying it. It got great reviews on Epicurious.  

2 1/4 cups water
1 cup sugar
3/4 cup unsweetened Dutch-process cocoa powder
Pinch of salt
6 ounces bittersweet or semisweet chocolate, chopped ( I used semi sweet)
1/2 tsp. vanilla
In a large saucepan, whisk together 1 1/2 cups water, sugar, cocoa powder, and salt.  Bring to a boil and let it boil for 45 seconds.
Remove from the heat and stir in the chocolate until it’s melted, then stir in the vanilla adn the remaining 3/4 cup water.  Transfer the mixture to a blender and blend for 15 seconds.  Chill the mixture thoroughly, then freeze it in your ice cream maker.  
*I don’t know, maybe I didn’t use high quality enough chocolate.  Also, I accidentally let just the sugar and water boil and forgot to add the cocoa until after it boiled. Maybe that had something to do with the taste.  
* If you use safe chocolate chips this could be dairy, egg , and gluten-free for people who have allergies.  
*Wolfgang surprised me when he rated this a 3.5 out of 4.  We have such different tastes.
