Blueberry Pancakes

This is our favorite pancake recipe.  I found it on Epicurious.  Frank ate 4 of them and Pumpkin had 2.  I didn’t have any buttermilk so I had to substitute with vinegar and milk.  I think it is 1 tbsp. vinegar per 1 cup milk and then you let it sit for 5 minutes.  I am sure they would taste even better with real buttermilk.  Here is the recipe:

1 1/3 cup flour
3 Tbsp. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 1/4 cups buttermilk
2 large eggs
2 tbsp. butter, melted, plus more for cooking
2 cups fresh blueberries ( I used frozen wild ones)
Pure maple syrup
Whisk the first 4 ingredients together.  Whisk buttermilk, eggs, and 2 tablespoons butter in a medium bowl; stir into dry. Fold in blueberries.
Drop this mixture onto the griddle that was brushed with butter.  Transfer to preheated oven (250) to keep warm until serving.
